Crawfish vs Lobster: What's the Difference?

Crawfish vs lobster: both are decapods, but crawfish are 3–5 inch freshwater animals and lobsters 1–4 pound sea creatures. Size, taste, meat yield and price.

Crayfish vs lobster comes down to water and scale: crawfish are 3-to-5-inch freshwater crustaceans that yield about 15 percent of their weight as tail meat, while American lobsters are 1-to-4-pound sea animals yielding 20 to 28 percent, with big claws worth eating. Both are decapods, both taste sweet, and lobster is firmer, meatier and several times the price per pound.

Order crawfish when you want a seasoned, social, by-the-pound boil; order lobster when you want a plate of firm, sweet meat and a claw to crack.

Yes, closely. The University of Kentucky’s entomology department places crayfish in the order Decapoda with lobsters, crabs and shrimp; crayfish form their own superfamily, Astacoidea, and the North American species belong mostly to the family Cambaridae. The USGS notes the red swamp crawfish is even sold as “freshwater lobster” in the aquarium trade.

The real divide is habitat. The LSU AgCenter describes Louisiana crawfish living in flooded rice fields, swamps and the Atchafalaya Basin, all fresh water. NOAA describes American lobsters on the ocean floor from Labrador to Cape Hatteras, burrowing in rocky coastal areas and along the edge of the continental shelf. Crawfish are what a clawed lobster becomes after a few million years in a ditch.

How big is a crawfish vs a lobster?

Red swamp crawfish adults measure 2.2 to 4.7 inches, per the USGS. The LSU AgCenter says minimum marketable size is about 3 inches (35 to the pound), consumers prefer 23-count or larger, and 10- to 15-count “selects” earn premium prices. A big crawfish still weighs under two ounces.

American lobsters must meet a minimum carapace length of 3 1/4 to 3 3/8 inches depending on the management area, according to NOAA, and the wholesale standard in DFO’s market analysis is the “live 1 1/2 lb” grade. Restaurant lobsters usually run 1 1/4 to 2 pounds; NOAA says the species can weigh up to 44 pounds. A single market lobster outweighs a dozen crawfish.

Do crawfish taste like lobster?

Close, but not the same. NOAA calls lobster “mild and sweet,” with meat that is “firm and somewhat fibrous,” and notes the tail is firmer than the claw. Crawfish tail meat is sweet and mild too, but softer and springier, nearer to shrimp in bite. The difference most people notice is the head: the yellow-orange “fat” (hepatopancreas) that the LSU AgCenter calls “an important flavoring condiment in Louisiana cuisine” gives boiled crawfish a rich, earthy depth that lobster meat lacks, while boil seasoning does the rest. Our lobster taste guide and crawfish taste guide go deeper.

How much meat do you get?

Lobster wins by a wide margin. The LSU AgCenter puts cooked crawfish tail meat at about 15 percent of live weight, as high as 22 to 23 percent early in the season when the animals are immature, and as low as 10 to 12 percent late in the season when claws and shells are heavy. Roughly 7 pounds of crawfish make 1 pound of tail meat.

DFO’s lobster market analysis lists meat yield at 20 to 28 percent of live weight for fall and Maine lobsters, with the tail alone at 23 to 25 percent in the shell. A 1 1/2-pound lobster delivers about 5 to 7 ounces of meat, spread across tail, claws and knuckles.

Crayfish vs lobster price: which costs more?

Lobster, by a lot. NOAA reports 2024 American lobster landings of 113 million pounds worth $720 million, which works out to about $6.40 per pound at the dock before shipping, holding and restaurant markup. Louisiana’s wild crawfish landings averaged 5 million kilograms worth $10 million a year from 1999 to 2022, per an LSU study, under $1 per pound at the dock, and Mississippi State Extension notes ungraded crawfish prices fall 40 to 55 percent for several weeks at peak production each spring.

Retail prices for both run well above dockside by the time they reach Orlando, but the gap never closes. That is why crawfish earn the “poor man’s lobster” tag: similar sweetness, a fraction of the price, bought by the 3-pound serving rather than the single animal.

Which is healthier?

They are nearly identical on the big numbers. USDA FoodData Central lists 100 grams of cooked northern lobster at 89 calories, 19.0 grams of protein and 0.86 grams of fat; the same weight of cooked farmed crawfish has 87 calories, 17.5 grams of protein and 1.3 grams of fat. Lobster carries more sodium (486 mg vs 97 mg), more selenium (73 vs 34 micrograms) and far more zinc and copper. Crawfish supply more vitamin B-12 (3.1 vs 1.4 micrograms). Both deliver about 160 to 200 mg of EPA and DHA omega-3s, and both count as crustacean shellfish for allergy purposes.

What about Florida spiny lobster?

Florida’s lobster is a different animal again. NOAA’s Caribbean spiny lobster profile says they “lack large front claws,” rely on long antennae, and grow up to 15 pounds and 18 inches along the shelf from North Carolina to Texas. Nearly all the meat is in the tail, which NOAA describes as mild, sweet and firm. Our Florida spiny lobster guide covers the season and the mini-season, and spiny lobster vs Maine lobster settles the tail-versus-claw debate.

Which should you order?

  • Group dinner on a budget: crawfish boil, 15- to 20-count, 3 pounds per person, February through May.
  • Celebration plate: a 1 1/2-pound steamed lobster, or a lobster roll if you want the meat without the work.
  • Bisque or étouffée: crawfish tail meat gives the richer, more seasoned version; lobster bisque is smoother and sweeter.
  • In Orlando in summer: crawfish are out of season, so look at spiny lobster tails from August on, or Gulf peel-and-eat shrimp and grouper on Fish On Fire’s menu.

Bottom line

Crawfish and lobster are cousins in the order Decapoda, split by fresh water versus salt and by a hundredfold difference in size. Crawfish give you sweet, soft tail meat and rich head fat at boil prices with a 15 percent yield; lobster gives firm, sweet meat from tail and claws at 20 to 28 percent yield for several times the cost. Pick by the occasion, not the flavor, because both are sweet.
